14 - 1/4 cup fresh parsley, chopped
15 - 2 green onions, sliced
16 - Sour cream, for serving (optional)
# Instructions:
01 - Heat olive oil in a large, deep skillet or cast-iron pan over medium-high heat. Add halved potatoes, cut-side down, and cook for 8 to 10 minutes until golden brown and tender. Season with salt and pepper.
02 - Push potatoes to one side of the skillet and add sliced sausage. Cook for 3 to 4 minutes until browned and heated through.
03 - Add sliced onion and bell pepper strips to the skillet. Cook for 5 to 6 minutes, stirring occasionally, until vegetables soften and start to caramelize. Stir in minced garlic and cook for 30 seconds until fragrant.
04 - Sprinkle smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper over the skillet. Toss gently to combine ingredients thoroughly.
05 - Remove skillet from heat and sprinkle shredded cheddar cheese evenly over the top. Cover and let sit for 2 to 3 minutes until cheese melts.
06 - Top with fresh parsley and sliced green onions. Serve directly from the skillet with dollops of sour cream if desired.
